This is a delicious, simple and totally healthy Sunday, one-pot recipe to have on hand for a busy week. I made this last night in the crock- pot, set on a 4-hour cook. I substituted low sodium organic chicken broth for the water and used black lentils and added a whole chopped bell pepper to the mix. Cook a pot of long grain brown jasmine rice alongside and you have a pocket-book-friendly and healthy way to fuel your body. I’ll also have these lentils atop a bed of spinach or frisee and serve with a poached egg to complement. Simply delicious!
