A quick lunch

I like to cut & clean veggies on Sunday night – it makes healthy eating is a cinch on the days that I need to grab – make – n – go!

Ingredients: 1/2 cucumber, peeled + handful of kale + small handful of fresh mint + juice from 1 small lemon + 1/2 banana + 1 serving of protein powder (Amazing Meal Vanilla). Note: All fruit/veg are organic.

1. Add all ingredients to cup
2. Fill with water to fill line
3. Blend for about 30 seconds
4. Top with 3 Tablespoons raw cashew nut/gogi berry mix & 2 Tablespoons of freeze dried apples (for crunch)
5. Enjoy!
